‘Satay’ is grilled marinated chicken, beef or mutton. The word was derived from the Tamil word for flesh, ‘sathai’. It is served with compressed rice cakes and a rich gravy blend of chillies and peanuts, South American ingredients brought to Southeast Asia by the Portuguese in the 17th century. Enamel pots such as this one were commonly used to hold satay sauce.
