‘Satay’ (grilled marinated chicken, beef or mutton) was typically sold at portable stalls. During the 1960s and 1970s, the highest concentration of satay vendors in Singapore was found at the popular Satay Club on the Esplanade, opposite the Padang. The stalls could be packed and slung on a shoulder-borne kander pole.
