The itinerant vendor is presented in fine detail with the satay stove, sauce containers and the wooden box. Attention is also given to the figure of the bare-foot Malay man dressed in traditional clothing and cap. The satay, similar to the kebab, comprises of tenderized and spiced meat cubes skewered on wooden sticks and grilled on charcoal fire. It is usually served with ground peanut sauce, diced cucumbers, onions, lime slices and sometimes with ketupat (steamed rice dumplings in plaited coconut leaf). Malay and Javanese satay hawkers were usually found on the lanes near Middle Road. Later a group of these vendors set up stalls near the Esplanade. Known as the Satay club. They became a favorite eating destination with the locals.
